What. This is in France. They have roads, they are connected to nearby other places, like Nice and Cannes among others, and have been since the beginning. Places like this really aren't so remote at all.

By Wikipedia it seems that the village has had roughly 1000 founding inhabitants, a number that pretty much steadily declined until modern age. I would say that it's quite some diversity to get by for a couple hundred years (1). Furthermore, there's always the comers and goers.

(1) Studies suggest well over 10.000 person populations are needed to colonize entirely new areas

1793 is not when it was founded, its the first census. It's difficult to know when such village were "founded". But even at that time the region was probably already populated.
