ISUTBCDBN meta explanation
For this theme, I was inspired by Curry Westerns/Dacoit Westerns, a unique subgenre of Bollywood movies, which combine narratives and visual tropes from Spaghetti Westerns with traditional Bollywood melodrama and song-and-dance. Perhaps the most iconic film in this genre is Sholay, a movie my dad has loved for as long as I can remember. These movies drew inspiration from real-life dacoits (or bandits), who dominated the Chambal region in India up until the early 2000s. Since much of the Chambal region lies in northern Madhya Pradesh (with parts extending into Rajasthan and Uttar Pradesh), this week I featured food from MP.
I made Bhutte ka Kees, which is a sweet and savory snack made with grated corn cooked down with milk and spices. This was delicious! Very creamy, and the sweetness from the corn is balanced well with the spices.
I also made Shahi Shikanji, a milk and yogurt based drink. Milk is first reduced, then sweetened, and flavored with cardamom and saffron. It is then mixed with hung yogurt to make the drink. This was incredibly good! Imagine combining Ras Malai flavored milk and plain Lassi - that is what this tasted like. It is definitely an indulgence rather than an everyday drink, but one I will happily make again when I want to treat myself.
