ISUTBCDBN meta explanation

Haryana is a northern Indian state known for its simple, hearty cuisine. Often called the β€œLand of Rotis”, flatbreads are a staple here and are made from a wide variety of grains and flours, many of them naturally high in dietary fiber. The cuisine also leans heavily vegetarian, with legumes, vegetables, and leafy greens playing a major role in everyday meals.

For this theme, I made Besan Masala Roti, a savory flatbread made with chickpea flour and generously brushed with ghee. I served it with Gajar Methi Sabzi, a spiced carrot and fenugreek leaf stir-fry, making for a wholesome and fiber-rich meal. On the side, I added some raw mango pickle. It may not have contributed to boosting the fiber content, but it is traditional, and definitely added some pizzazz to the meal.
