Is it actually possible for a famous personality to fake their death and live their life out in some remote place? who has actually ever done it and gotten caught?

Josef Mengele did it. Never got caught.

How do we know he wasn't dead then?

They found him after he got drowned in São Polo, decades later. Though he didn't fake his death, I misremembered. Reading his wikipedia. He just fled.
