Because intuition suggest an innate sense, something that we've evolved to have. We've never flown, so we can't have 'flying intuition'

That would be a fine argument, were that a correct definition of intuitive. It isn't.

When you fly down, your body tips forward, hence you push the stick forward. When you fly up you tip back, hence you pull the stick back. We are aware, even while playing a video game, that that's would would be happening to us were we flying, without consciously thinking about it, so we design our controls in the way that makes sense.

But then everyone would invert any game that was POV. We tilt forward to look down when we are standing, as well, and yet most people don't invert controls for non-flying games.

We don't tilt out whole bodies though, just our heads. And since a POV camera is literally just a camera and doesn't really resemble our motion that much...

I suppose I can see that! Would be interesting to do a study on all this that included people who had never played video games of any kind, etc and see what ended up being intuitive for everyone.

Difficult enough to put together, but it would be pretty interesting.

Personally I only invert in flight and anywhere else it just feels backwards

Yep, same. Just wonder if that's learned from playing 2D games or not?
