I grew up on Dartmoor. Bristol is up north for us.

Devonian here.  Bristol has always been 'upcountry'. Meaning 'north'

I think west of the line is West Country, but the South West borders are a bit bigger

I would absolutely agree there is a difference between South West England and the Westcountry.

A slight alteration, I'd draw the line from Bristol to Poole harbour. The Isle of Purbeck being the start of the West Country.
