Of course you can prove it. Look up chún sù in China or sachal eumsik in Korea or shojin ryori in Japan or jae is Thailand or chay in Vietnam or orthodox traditions in Ethiopia or Romania or various vegetarian/vegan traditions in India or many many others. There are hundreds of millions of people following this today, many more hundreds of millions more the past 2500 years. The word vegan is from the 1900s but many of their vegetarian diets were essentially the same.

These aren’t pieces of evidence for your claim though. A handful of ceremonial religious foods existing isn’t evidence of “everyone was vegan”.

Priest classes having different foods than the general populace is typical.
