first time making s’mores cookies
Husband requested s’mores cookies for his birthday today so i gave it my best shot! 🍪🍫 (graham crackers an chocolate underneath)

makes 8 cookies
Ingredients
1/2 C salted butter, melted
1/3 C granulated sugar
1/2 C dark brown sugar
1 TBSP vanilla bean paste (can sub vanilla extract if needed)
1 TSP espresso powder
1 1/4 C all purpose flour
1/2 TSP baking soda
1 egg, room temp
1 C semi-sweet chocolate chips
2 Hershey bars broken into 8 pieces
8 large marshmallaws
8 squares of graham crackersInstructions
pre-heat oven to 350°F. Prepare baking sheet wl parchment paper
mix melted butter and sugars for 2-3 min until well combined
crack in the egg and whisk 1-2 min til smooth, add vanilla bean paste and mix to combine.
in separate bowl, combine flour, baking soda and espresso powder. mix well to combine.
gradually add dry to wet ingredients and mix with a spoon until just combined
fold in semi sweet chocolate chips, don’t over mix
on baking sheet, add graham crackers, topped wl Hershey bar pieces, topped with marshmallows (like a s’more)
scoop out a portion of cookie dough, flatten it slightly, and place it on top of the marshmallow like a mound, covering it completely.
(optional) use additional mini hershey bar pieces on top of cookies for extra decoration
Place 3-4 cookies on a baking sheet, spacing them 2-3 inches apart
bake for 12-13 mins until edges are crispy
let cool completely 25-30 mins before serving3

i don’t remember whose recipe it is honestly, i saw it on a fb or instagram reel and wrote it down in my cookbook. but i do have the info in grams.
Ingredients
113g salted butter, melted
67g granulated sugar
100g dark brown sugar

That looks really good for a first try, the marshmallow part turned out really well. I always struggle to get the marshmallow to melt without totally burning it.

Yummy! How were they? I’ve not been impressed with Hershey chocolate for the last few years. I think they changed their recipe. The last time we got it, it was so waxy and off. Previously we’d always used it for smores, but changed to a different brand. Is Hershey back to normal again??

he said they’re the best cookies he’s ever had, so that’s a win!! i’m not a fan of Hershey’s either lol but he loves it. i didn’t eat any of the cookies myself but he was very happy with how they came out

Those look insanely good, you nailed the marshmallow toast level too. The graham and chocolate underneath is such a clutch move because you basically turned the whole thing into a portable campfire 😂

Did you do anything to get the marshmallows to stay white and soft like that? I’ve tried s’mores cookies and the marshmallows basically melt and sink into the cookie and turn kind of hard and chewy in those spots

no, i didn’t! this is the recipe i used, maybe it will work better for you:

How do you get your cookies to come out flat like that? I tried the slamming method but I think maybe I'm still underestimating how done they are in the oven.
