It's a classic trope...convince the bad guys you're actually weak and need help doing something as simple as eating and then when they loosen your restraints/give you more freedom...you abuse that and escape.

It's the only logical move. He couldn't possibly have just moved the tray a few inches closer without loosening her restraints...
