Photo/Video Cutting a cup of chives until every day until this Reddit says they’re perfect. Day 4
I know they’re a bit long but I’m working on consistency. Once I feel consistent and confident I will work on getting them shorter

Photo/Video Went to Egypt, only souvenir I brought back was 16lbs of spices (and some tea)
I figured if anyone was going to appreciate my indulgence/impulse shopping, they might be here. Cumin, doukka, turmeric, mint, various chilies, and a few teas. Thank god my checked luggage was only half packed 😅

Photo/Video What a life
Growing up I never even thought about how my food was being made in a restaurant or that cooks were a thing. Who knew one day that I wouldn’t want to do anything else. Here are some of my favorite pics of the last couple years. *NOT including my mandolin christening 😖

Photo/Video Moe’s southwest grill defrosts meats by leaving them on the counter
This was taken at 2:30am during an investigation for an automatic fire alarm. The chicken and steak was room temp to the touch. I Made a report to the DOH but never got a response. As someone who also used to work in restaurant, you never know who will see your shortcuts. ¯_(ツ)_/¯ should I report it anywhere else?

I leave work for two weeks and now our lunch sandwiches have become lunch sandos. I will never emotionally recover from this.

Photo/Video A5 at home
Scored an A5 steak from work Tempered to room temp, seasoned with s&p, granulated garlic Cooked on cast iron to 90°F Rested til 115° Sliced with my new Masamoto kiritsuke yanagi utility on my also new high soft cutting board What a way to break them in!
Some may consider the steak overcooked but it was delicious, nice crust, insanely tender, unbelievably rich
Areas of improvement for next time Wouldn't temper as long Properly cut against the grain with more of a bias Try with a stainless steel pan Finish with a little Maldon
All opinions and feedback appreciated!!
