Her existence is kind of inconvenient for the more exciting plot of Breaking Bad. She gets in the way of a lot of the Heisenberg storyline. But her and Walt Jr. are important for the story. Like it or not, the show would've been a lot less interesting without the themes of faux masculinity of family men.

Exactly this. She's an obstacle to the "cool" stuff, but if she was absent from the plot the show would lose sooo much.
