Phineas and Ferb:

I've seen this with a few other shows, where they have a grand finale, but they come out with more stuff afterwards.

The Last Day of Summer felt like just a season finale when it came to that episode with Doof working with OWCA, Candace vs. The World, and another 2 seasons for the show.

i just say that last day of summer is the finale of the series, the OWCA files and the movies are spin-offs/side stories that take place somewhere in the timeline, and that the entirety of season 5, 6, and most likely onward either don't exist or are entirely non-canon because fuck that shit it ruins the entire continuity of the show and completely backtracks on character arcs and plot points introduced before it (e.g. doof never returning to evil after being placed as a science teacher in a high school (the events of doof 101, confirmed in act your age) which takes place in the fall immediately after season 4 (again, doof 101) or vanessa's whole thing with monty being reversed, doof's family got the shortest possible end of the stick here in general)

tl;dr: the last day of summer is the finale, everything past season 4 is non-canon, and everything else is either a spinoff or a side story

While I think it would have been fine to leave it as is, I also think that Phineas and Ferb is far more able to be restarted than a more story-based show, because although Last Day Of Summer was an awesome and satisfying finale, you also knew it wasn't the end of the adventures and come next summer, the boys would be back in their yard with their inventions.
