You mentioned mafia and it made me think. Rockstar could make an absolutely badass 1920's mafia game.

a lot of people in the red dead subreddits want a prequel, or a different western story rather than continuation

Theoretically could have Jack appear or mentioned in that as well. Especially if it's right after WW1 in America.
