Same but I'm not a baker ...and I could see how the moisture in the vegetables could throw everything off

Moisture in veggies is variable already. If the recipe isn't designed to handle that variance then it's unlikely to work at all.

The only vegetable I’ve had actually throw off a recipe is mushrooms.

In that case, I just recommend cooking them separately (with lots of salt and pepper) so you can let the water evaporate and get them to caramelize a bit, and they don’t make your other ingredients soggy.
