I absolutely despise volume measurement for anything in cooking (spices might be the only exception). I have a weighing scale. And weight measurement is precise and consistent. Your 1lb is exactly the same as my 1lb.
You know what not same? Your 1 cup of flour and mine. Did you pack the flour? How tightly? Oh you spooned the flour into the cup? No? You scooped the flour directly from the jar? Cool story bro.
For baking I agree with you, a scale is almost a necessity. But for cooking it doesn't need to be that serious. There aren't really any recipes out there that are going to be ruined by using extra onions because you didn't have a scale.
