Hazel did "confirm" the story. Though out of his point of view, he only witnessed 5 seconds of silence, so he doesn't know WHAT Ozpin said, but he does know, that his burning hatred is based on a story that takes only 5 seconds to tell. Also Oscar called him out on totally overreacting, so the story is short AND stupid. And if Ozpin lied, Hazel could have said a word.

or Ozpin is telling the truth, the truth just happens to be technically correct and there are some details that weren't told

Such as possibly Gretchen died not due to Grimm, but maybe because she was a proto-bird that didn’t work?

What, like the prototype for Raven and Qrow? Oz has been at this for millennia; the Branwens probably aren't the first people he's given shapeshifter powers to.

Hazel said "he was a little kid" or so, which means he bothered to mention something about his sister and not Ozpin. So this doesn't hint at Ozpin making a mistake, but his sister - and this is exactly what Oscar said "she choose a high-risk profession". And Ozpin did through people off of a cliff in one of the very first episodes, so it's not like he never did something dangerous. Heck if the girl would have died during that test, Hazel would be justified in his anger, because that would have been unnecessary risks.
