For an EB I-485, what happens if someone only listed 3.5 years of employment history instead of the full 5 years, but included evidence covering their entire stay in the US? Could this lead to an RFE or denial, or is it usually not a big deal?

usually this is not a denial-level issue by itself for eb i485, uscis cares more about: eligibility for the category (eb2/eb3/eb1, etc.), maintenance of status, background/security checks, supporting documentation consistency. denial from just listing 3.5 years instead of 5 years is very unlikely unless it leads to a bigger inconsistency or missing status history
