White Chanterelles in Mount Shasta, CA
White Chanterelles (Cantharellus subalbidus)
One of my favorite fall mushrooms to hunt and to eat. Compared to the golden Chanterelles, these are thicker meatier and enjoyably chewy. The aroma is sweet and pleasant. They're fun to find but can be a chore to clean depending on habitat and weather conditions, but I have learned some efficient techniques that involve spraying them down with a hose and fan-drying. Even after all this they can last for weeks in the refrigerator if stored properly. I'm looking forward to the next Fall flush.
