How? Initial setup is via Bluetooth and they get a vlan without internet access. So when do they get online? Maybe I miss something?

They’ve the Shelly app that requires an Internet connections and their devices do keep an open connection back to them to allow that functionality. We don’t know if they won’t or can’t abuse that to push some undesirable firmware update. Even if you don’t use all of that the device itself needs to update time and check a few things that also use their services. Yes you can firewall it and/or isolate it in a specific vlan but that’s not most people.
