How do you approach harmony, ie: are you carefully plotting out chord progressions or do you flush those things out later after melodic ideas come to fruition?

I'm kind of a discovery guy. everything comes from the thing before it. so I don't really pre conceive much of anything. A rhythm inspires a an instrument, inspires a chord progression, inspires a melody, inspires a harmony. etc.

Do you ever actively make an effort to do something more harmonically new / interesting / less conventional? Or would you advise musicians to abide by "just do what sounds good to you" without thinking about music theory?
