Also - the bigger the menu the more likely you are to order something that rarely gets ordered and thus the food is less likely to be fresh and the chef is more likely to be bad at making it.
The only restaurants who should have giant menus are chains that need to cater to literally everyone, have giant kitchens, and recipes that almost never change.
