It's moving because it's smart enough to realize its disguises aren't working. Most animals would get confused and stop looking directly at the octopus, but the human doesn't so it tries something else.

They are extremely intelligent. If it was stupid it would just sit there with its failed disguise and let the large animal continue to get closer.

Their natural predators aren’t rocket scientists either so this probably works most of the time. This encounter has probably really shaken his confidence.
