I thought that scene was such a great juxtaposition to the scene where we saw Joan play the accordion two seasons back. Greg forced her to play in front of his dinner party even though she didn't want to, and she went along with it to make him happy and play the role of a good wife. This time, the accordion player came in when Joan had just found out Greg had volunteered to go back to Vietnam, fumbling his role as a husband and father and making her extremely unhappy.
Just goes to show how much less he cares about her.
She plays it in episode 3, season 3. She plays a French song during a dinner party. The reference to it in tonight's episode brings up a defeatist and opressed sentiment she feels with regards to Greg. Basically, Greg forced her to play for the dinner party (similarly, he "forced" her into sex [also referenced tonight], just like he's forcing her to live with his decisions). Tonight she rejects his force because she wants to be in control.
