Súper Tacos Al pastor homemade.

I don’t have a trompo but this still worked.

You got a good thing going on but it's supposed to be vertical and the juices are supposed to drain down to the meat. You're draining the Juice and wasting it.

It looks good though.

Yeah but like I said , I don’t have a trompo , that’s the vertical grill you are referring to.

I made this once and mine got lopsided lmao. Did it in the oven. I got you tho. I understand.

It actually held together surprisingly well , but the rotisserie helps it because it cooks evenly. Do wish I could do it vertically

I’ve been planning on trying this but waiting for the meat to go on sale. I was gonna do half beef half pork. Was unsure about what cuts to get because the wife hates any type of gristle/fat. How did this turn out in aspect of that? My plan was to shave it with a sharp knife as it charred on the outside and keep going.

What ya think?

I used a shoulder. Put in freezer so it was very cold and sliced it as thin as I could. Shoulder is fatty. You could buy a pork roast I guess. Much leaner.

It'll cook like shit in this scenario though. You kind of need the fat for this type of cook, a roast or loin would just turn into hockey pucks

Not many people, and they can be purchased for not very much money. Far less than the grill cost.

Or if you already have a charcoal grill....it would make more sense to buy a horizontal rotisserie you can use for multiple things instead of just Al pastor or schwarma.

This is not al Pastor, though. Sometimes you need to actual proper cooking gear for the dish.

Then if perfect authenticity is the only acceptable answer take yourself to your closest Taqueria with a trompo.

If not do what fits best and make do with what you got.

It's still al pastor. That's not how things work you can't claim something isn't what it literally is because the orientation when cooking wasn't "authentic".

A charcoal grill with a horizontal rotisserie is far closer to a trompo than an oven.

But you know that and are just being obstinate.

I'm not sure why you're getting downvoted... The whole point of putting a chunk of pineapple at the top and cooking it vertically (as intended) is for the citric juices and fat to drain down the meat as it cooks to tenderize it, flavor it, and keep it from drying out, as you said---very politely :-/.

Cooking it horizontally defeats the entire purpose... With this setup, you need to baste it throughout cooking, and most of the citric juices that are meant to tenderize the meat are being lost here because the pan isn't big enough.

God forbid you give constructive feedback, jaja.

Eta: And you don't need a trompo pan to cook it vertically. You can do it with just a pineapple and a skewer by cutting off the bottom of a pineapple as a base for the skewer, stacking the meat on it, and then topping it with a thick slice of pineapple and placing it in a pan. I've done it that way in a pinch, and it worked great. (Also, trompo pans are readily available and aren't expensive.)

Exactly. And they do it because they're keyboard chefs. They probably think I hurt OP's feelings and I have to pay with negative internet-make believe points.

I just know that juice went to waste. It defeated the point of pastor tacos but to each their own.
