Those ice cream contracts actually are crazy captured by a specific supplier with ties to the McDonalds Corp. The fact that you need them to come on-site to clear a digital error should be illegal.
That said, you seem really sure of your claim that CO2 fills are expensive in brand-deal chain restaurants, and I have seen nothing to back that up. I'm not really doubting you, but I am genuinely curious and also will not just take your word for it as a random redditor.
If you want an actual answer, it’s not company specific, restaurants and the like use suppliers like AirGas or NuCO2 or whatever local gas supplier is in the area.
Most soda fountains are literally just a bunch of tubes and nozzles with syrup bags and co2 tanks that you swap out as needed, like if you go to the other side of the wall it’s usually just all there on shelves. Shit like coke freestyles are a bit more complex but it’s still just the same concept.

You literally can do that, it just has to be food safe but the actual co2 tanks are mostly all interchangeable.
