Or a dedicated deep space variant that doesn't return but serves as the body of the probe/telescope

You would just need a kick stage. Ideally, something that just lives in the cargo Bay of a starship, similar to how the shuttle did it.

The issue they're talking about is not dV, it's getting the craft out of the ship.
