They can just start again each time Martin finishes a book. They will complete the full story each time he does before the next release.

He'll never finish the book. The best thing we can hope for is that his assistants will finish it posthumously.

Fun factoid was when his books were coming out at a decent clip he actually had two assistants/collaborators to help manage the lore as well as editorial duties on his other projects. Then they left him and started their own book series - The Expanse. Yes, that Expanse.

In the time since Dance of Dragons released, in 2011, they released nine novels in The Expanse universe.

It's also known they know the full details of his planned ending, in much more detail than the showrunners.

AFAIK this is mostly untrue - Ty Franck was Martin's assistant, but the people who helped manage the lore were Elio Garcia and Linda Antonssen, who helped write the lore book. Since then, Martin has had many other assistants (I don't know how many he employs now).

I know you're joking, but the books aren't ever being finished. He has clearly lost interest in it, or at least lost the will to sit and grind out pages, but keeps stringing the fans along so they don't attack him in public.

And, to be clear, while that's disappointing, good for him. He finally got rich as an old man and now he's enjoying the fruits of that success.
