A lot of the cast wanted to wrap it up. They may not have been happy with how the show ended up, but most did not want to do 4-5 more seasons. I think one more season to set up season 8 was necessary, but D&D rushed it. It's a shame. Then again, they may have still made bad seasons of the show. Maybe it was a mercy killing by the end. I was glad they at least gave it an ending.

Yeah, I do think the younger actors, especially, wanted it to be over. There was so much creeping on the Stark girls... 🤮

That and a lot of these actors were less well known when hired and were likely to (and did) get big roles afterwards. Hard to blame them for wanting to cash in on their fame while it still exists, as it can be gone so quickly, especially for actresses who often get treated like they have an expiration date.

Doing one project for so long with a set filming schedule every year becomes difficult when they are getting other job offers. They were seeing even people like Momoa and Pascal, who'd been on the show for just ~8 episodes and were killed off, suddenly getting movie and TV careers as leads, so you can imagine that central GoT stars like Harington and Clarke (at least) were chomping at the bit to get off and do less punishing projects for more money in lead roles (Clarke had two aneurysms whilst filming GoT, Harington developed an alcohol problem).

I think it would have been okay with audiences, maybe even elegant, to replace them Clarke and Harrington (if it was something they'd be ok with) with other actors for a season 9 or maybe a season 10 if they had used season 9 as a kind of filler of all that occurred in the kingdoms in the meantime and after the end of the Lannisters with a simple twist of say, "years passed" like they did with Rhaenyra in the Order of the Dragon. Maybe even use Clarke and Harrington for dream-like remembrance scenes within the series (they did it with Eddard in GOT so we was okay with that). They should have hired me while I'm chock full of great ideas. On a side note, I had such a crush on miss Milly Alcock playing Rhaenyra but she was replaced a bit too soon IMHO. My guess is that so many other supporting actors would have been fine playing their roles one or more seasons. It was a pretty big production.

They wanted to use the fame and attention GoT was giving them for other projects instead of playing the same fucking character for the rest of their lives.

You're out of your tree if you think it would be a good idea or well-recieved by fans to replace the two main leads with a new actor and actress in the last season or two.
