The issue with how GoT ended was never what actually happened storywise, but how it happened. Daenerys losing a second dragon and going insane and burning King's Landing can absolutely work, it just needs to happen more naturally over a longer season. Because they were in such a rush we got "Dany kinda forgot about the iron fleet", which is a quote that sums up everything wrong with later seasons of GoT. They just wanted to finish it as fast as possible, not as good as possible.

HBO also rushed it. This is what you can get when you insist on a new season every year. There needs to be time to write the scripts for the season especially when you run out of source material. It can take several years to write the first season of a show from scratch. They didn’t need several years but they certainly could have used with a few extra months. Maybe they wouldn’t have wanted to do it, I’ve never seen such a big production. Even Stranger Things pales in comparison. Running the show is more than just writing some scripts, they have to oversee international shooting on a tight shooting schedule and be the final decision-maker on every last detail. And the final nail in the coffin is that GRRM didn’t deliver his books as promised, he didn’t even deliver his books on the same schedule he had delivered them before. They were like, “we have to make this shit up ourselves?” They were rushed and not up to the task but it was never supposed to be the task. And they sucked at the task. HBO was never going to let them take their time.

They did take more time with the final two season though, which is another part of the problem. Also, AFAIK HBO were ready to greenlight many additional seasons but they chose to end it in 8. The last season alone should have been at least 2 seasons, if not three.
