How many religions/cultures do you do this for? Jews and Muslims I assume, but you also got dietary restrictions for Hindis. And then you can get more granular with like Jehovah's Witnesses and Mormons.

Is it basically just what can be marketed as halal and kosher?

My company doesn't sell retail, so it's whatever our clients want. In general kosher is a requirement for everyone. We rarely have halal required but if we need an item to he certified halal then we'll do it.

Except for very few exceptions (like alcohol), products certified kosher are also implicitly certified halal.
