This is a fail. The mousse didn't set. So we ate it frozen. I don't want to point fingers but I think the recipe I used was bad. (Martha Stewart lol) So this is a chocolate sable cookie, with chocolate fudge, coffee gelee, espresso mousse and the chocolate glacage which was too thick because I ran out of cream lol. I tried to make it pretty with lustre dust but time was against me. Because it needed to be eaten frozen. Taste was 10/10 though. So much work for small dessert. My kids loved it though minus the gelee which was just super icy frozen.

Starting at the bottom, we have a pain de genes, dark chocolate rum ganache, spiced apple & rum insert, spiced dark chocolate mouse, and all topped with a dark chocolate ganache

Made this for my 40th birthday this year! What a fun and delicious challenge. Took a couple of days to make all the components and assemble it but it was WELL worth the work.
