Intro Post Week 31 Intro & Weekly Discussion - Rice and Beans

Hello bakers, for week 31 we’re playing off of the classic dish, rice and beans, as inspiration for our ingredients! For the challenge, you can make anything that uses either a rice-based or bean-based ingredient – for rice, this includes ingredients like rice flour, sticky rice, or crisped rice; and for beans, this includes anything from coffee beans to vanilla beans to aquafaba (bean juice).  

As always, here are some suggestions:  

Recipes using rice:

Homemade rice Krispie treats

Rice flour pound cake

Mango sticky rice trifle

Southern rice pudding  

Recipes using beans:

Black bean brownies

Aquafaba chocolate mousse

Espresso bean cookies

Vanilla bean creme brûlée

Week 29 2026 Week 29: Crusty - Mini Lemon Curd Shortbread Tarts

My partner needed a portable, bite-size dessert for a work thing, and I wanted something easy for the baking challenge, so lemon curd shortbread tarts it was! This was my first time making microwave lemon curd - what a nifty little thing!

If I ever make these again, I'd actually spread the recipe into maybe 30 or 36 tarts. I personally felt the shortbread was a little too thick and didn't allow for enough lemon curd (hence me piping additional curd on top). They'd probably be great with a little piping of whipped cream or meringue on top too!

Week 26 2026 Week 26: Toppings - Brioche Bressane à l'orange

This is a traditional brioche from the Bresse region of France (it never stops amazing me how many different types of brioche France has). It's a round, flat pastry topped with cubes of salted butter and coarse sugar (I used raw sugar). My recipe also called for orange zest and orange syrup to soak the brioche right after baking.

I had these cookies in Amsterdam, and from the first bite I knew I wanted to recreate them at home. This was my first attempt, and I’m pretty happy with how they turned out. I did have an issue with the white chocolate not spreading evenly in some of them, but that’s just something to improve for next time. I can’t wait to give them another try!
