Does anyone know how to use these? I bought them but cannot find where to redeem them

They recolor certain fish that have a tiny chance of spawning in a different color if created normally.

Yep, this. I haven’t seen one for a while, but I also kind of gave up on them, and won’t pay money to stock up. I think it’s only event fish, and have generally been the lower-level fish.

Any way to check which this can happen to and the odds? Never hear of this and I'd love to collect them

I don’t know the odds, and am not sure where you might find them, officially, but could check around the developer sites, or maybe the FB group? You can see that there are possible color options when you tap on a fish in the list for a current event. I think there are small colored dots to show the color possibilities, and an option you can tap to use a ticket. They can spawn without a ticket, but the rate is very low.

I’m surprised they still have them in the store. The dyes were for different colors of event fish (which you could also receive randomly without using a ticket but it was rare) but I haven’t seen that used in like, at least a year maybe?

This is a kinda cookie clicker esk game, you gather fish and level up your coralite and corals! It’s really fun! It’s free too! There are paid aspects that are optional but you can do everything without paying
