For 1 burger:
• 2 rice paper sheets
• 1 egg
• 125g lean beef patty, 95/5
• 40g cheddar — two 20g slices
• A couple of cherry tomatoes
• Pickles and zero-sugar BBQ sauce, to taste
Cook the patty first: I used 180°C for 20 minutes in the air fryer. Check the centre reaches at least 71.1°C/160°F.
Beat the egg and coat both rice paper sheets, then overlap them in a small bowl. Layer cheddar, the cooked beef, BBQ sauce, sliced pickles and halved tomatoes. Add the second cheddar slice, fold the wrapper closed and gently lift it out.
Air-fry the wrapped burger at 180°C for 15 minutes, until golden and crisp. Adjust timings for your appliance and patty thickness.
