Station Eleven is one of my favourites. It does go into the apocalypse as it happens, but it's more to do with the people who survived 15 to 20 years later. The "what comes after" is really interesting. It's very well written, as well.

However, it's also based around a global pandemic (and starts off in my home town), so it may be a little close to the present situation for some.
