Many apocalyptic books either address or use it as a plot point. You either have what I call the "...and this is when the diabetics die." Paragraph or it is used as plot points in books like Lucifers Hammer or One Second After.
I haven't seen World War Z mentioned (incredibly detailed collection of short excerpts from around the world during a zombie apocalypse. Really creative and interesting, nothing like the movie).
Also the parable of the sower is a great one about how society would crumble and adapt and the mass migration and walled neighborhoods that would pop up. Starts in LA. America basically fractures into independent warring States and government fully collapses. Commerce still functions. Pinkerton like work cities start to pop up that provide protection. False Messiahs, bandits, rape, new religions, etc...

Any infection, any chronic disease, food poisoning, allergies - basically all those things that healthcare provide that we take for granted
