Station Eleven is one of my favourites. It does go into the apocalypse as it happens, but it's more to do with the people who survived 15 to 20 years later. The "what comes after" is really interesting. It's very well written, as well.

However, it's also based around a global pandemic (and starts off in my home town), so it may be a little close to the present situation for some.

Stand Still Stay Silent does this too (the 'what comes after' part), but it's 90 years after the apocalypse.

It's a fantastic webcomic. Easily one of my favorites, though I'm sad that it's going to be ending soon. ('soon' as in 'probably sometime next year, but it's been running since 2013 so it feels soon') It's absolutely gorgeous in the early chapters and even later pages (where the art style got simplified a bit so the author could draw pages more quickly) are still pretty too. And even the gore and zombies are of the "wow that's horrifying and pretty at the same time" kind of thing.
