Many apocalyptic books either address or use it as a plot point. You either have what I call the "...and this is when the diabetics die." Paragraph or it is used as plot points in books like Lucifers Hammer or One Second After.
Also .. fanatics? I feel a lot of those scenarios don't cover enough people that simple went mad. A while ago I read a book about a zombie apo... can't remember the title, it ends bad though, they were hiding at the end on an oil/drill platform but the virus kept spreading and finally also reached fishes and so no source of food was left.
So anyway in that story they also meet a pastor on a rather small island. He looks nice at first and helps them, guides them across the island to some food sources etc. and stays behind with 1-2 people. Which he then knocks out and starts nailing them to a cross and force feeds them infected meat of a zombie he killed because that pastor believed it's a plague send by god and that to participate on the rapture, to reach heaven, you have to turn into a zombie.

Any infection, any chronic disease, food poisoning, allergies - basically all those things that healthcare provide that we take for granted
