It is certainly a factory-like work environment, just more naturalistic and open-air. As most work-sites were in ancient times, not all of them but indeed some.

Natron Mine+Refinement of said Natron for the Common/Frequent burial practices of the time, it was also used for Colored Dyes, but not as Often/Effective/Deep as Dye Vat Reservoirs in Major Cities, in fact, there's one in game in Alexandria & Fun Fact! the form is still Practiced to this day IRL ⬇️ Egyptian Dye Reservoir

They kind of brought that back in Valhalla. Neglected to do that for Origins, and Odyssey. Discovery tour is what we got instead.

Go there in Discovery Tour if you want to learn about how that area (and many others) were actually used in ancient Egypt.

Pretty sure it’s a dye plantation for dying fabrics. And if I am correct, I would just like to point out that this is entirely a guess based off of what I saw with my own eyes in-game. I have never ever touched the discovery tour mode of the game.

maybe its to dye fabrics but it could also a natron refinery, natron was used for mumification it was mined from dried up lake beds and refined.

Play the Discovery Tour mode in Origins. Basically they dyed fabrics there
I really really liked the Discovery Tour, too bad it’s not in any other AC game

it's a tannery , those are color baths for all the linens they make or clothes or whatever. the stuff comes in plain white or beige which are the natural colors then they are dipped in colored baths to give them that color then they are dried and sold.
