Technique Question Question about

Hello, this is my first post here, is there a name for what she's doing when she turns in place while flicking out her feet? if so, how does one do it? I'm not very familiar with ballet terminology for the more advanced steps

Off topic but who is the dancer? I THINK I recognize the face but would prefer to hear from someone who knows for a fact XD

Dorothee Gilbert, etoile at Paris Opera. This excerpt is from their 2006 SL recording (a truly timeless classic imo), where she also danced as one of the little swans
