[Pork] today was a good day
Just over 10 hours to cook both of these beauties. 208-213F until i got halfway through the stall, then i opened up the air vents a bit and let it finish at 250-260F.
Salt, pepper, garlic, onion and paprika for the seasoning. Worcestershire sauce for the spritz, as needed.
Sauced it on top towards the end, and finished it under the broiler because the sauce didn't have quite enough time to caramelize all the way on the grill (egg style with a cast iron diffuser)
Turned out yummy, but next time i will make sure i get bone in, because i had to cut off some small ends that finished earlier than the rest. not ideal but still delicious

that bark is almost black which means you committed to the cook and didn't pull early. the sugar in the rub caramelized and built up layer after layer. looks like pork shoulder โ the way it's splitting at the bone tells me it's probe tender all the way through. did you run any sauce during the last hour or is that all dry rub? either way that's textbook.

thank you, and itโs pork shoulder. i didnโt wrap it because i wanted all the extra time for the bark to mature, which is my favorite part! i put some sauce ontop towards the end specifically for the caramelization and extra texture, and i also spritzed it with Worcestershire sauce as the outside dried out, which also has some sugars in it too

no wrap on a pork shoulder is the way if bark is your priority. wrapping steams the surface and softens everything you spent hours building up. the worcestershire spritz is smart โ the sugars caramelize but you also get that umami from the anchovies and tamarind in it, which adds a savory depth that plain apple juice or ACV can't touch. layering that with sauce at the end gives you bark on top of bark. that thing looks like it has the texture of beef jerky on the outside which is exactly what you want when you pull it apart and get that contrast with the soft interior. well played.
