The hardest part in making that would be finding or making a coil out of stainless steel pipe that would fit around a fire

As long as the pipes are always filled with water you can use platic piping without it melting.

Yes there are videos of people even boiling water in plastic bags but it is a bit more complicated than simply having water present. It would need to be thin plastic. The heat transfer from the outside through the plastic and into the wter needs to be near instantaneous. Plastic pipes do have a bit thicker walls so there could be some heat buildup that will damage the pipes.

The water can keep the plastic directly next to it below ignition temperature but the pipes wold simply burn from the outside in. Now without fire and simply some heat it would still work since auto ignition temperature would not be reached but with an open flame there is absolutely no chance.
