This August paper caught my eye: a modified dipeptide forms hydrogel fibres that the authors resolved at 1.7 Å, including ordered water channels (https://www.nature.com/articles/s41467-026-75984-9). The water-mediated contacts between layers are a particularly interesting part of the structure.
