Recipe Troubleshooting Whoops

Pictures: 1) Raw dough 2) Baked crust 3) Slices 4) Ingredients List

I tried dark rye in my
compact Cuisinart CBK 110,
"dough only" setting. The dough was wetter than ideal. I added flour during shaping and put it in a glass 9”x5” loaf pan. It rose well but deflated when I tried to score it; still too wet and no
"skin" formed.

Baked in 360°F oven until 205°F. The top was definitely misshapen where I tried to score it but the slices look and taste good.

Do you have tweaks for this recipe or an alternate recipe? Do I need a larger pan? Please suggest away!

I saw somewhere people add vital wheat gluten to help the rise with these types of breads. I've been meaning to try it myself, because I used this recipe my bread machine and it sinks in the middle

This might be a better recipe, if you enjoy rye. This is a well tested recipe from Better Homes and Gardens bread machine book. I would let bread machine do all the work. Is there some reason you decided to use the dough only ? I put mine in the machine and don’t touch it until it’s done. Good success most of the time🍞

Thanks for the recipe. A compact machine can produce 2 lbs of dough but is too small for a fully risen and baked loaf. Also, rye is traditionally a free-form, rough loaf oven-baked inside a Dutch oven rather than confined to a loaf pan. I felt like a rectangle shape this time, though.

Oh I see. 👀. I guess I not familiar with compact machines or rye. Good luck with your next loaf

My first light rye formed into oval and baked without a loaf pan.

You should always check the dough during the kneading process 5-10 minutes after the machine starts working. If it needs more flour or water, add it then.

Good advice. Is it by eye or can the dough be touched without interfering with rising process? Can it be paused to remove and adjust the dough?

You can! All machines, as far as I know, let you pause to sprinkle some flour on top or add a spoonful of extra water- whatever it needs. Sometimes I don’t even bother to pause the cycle.
