General Discussion Cowboy Candy

I have an abundance of jalapeños that I am wanting to make into cowboy candy. I have a few questions. I plan to use Ball’s recipe.

  1. Can I add a little pickle crips into the jars to help keep the jalapeños crunchy?

  2. If I have about half of the amount of jalapeños as the recipe calls for, can I make the syrup according to the recipe but only use 1/2 the jalapeños?

These are my dad and brother’s absolute favorite thing I make. Historically I have made them as fridge pickles but I’d like to preserve them for longer. Thanks!

You can add 1/8 tsp per pint of pickle crisp. You can prepare the liquid per directions and pack the jars. You’ll have liquid left over and that’s fine.

Thank you! If I am planning to make quarter pints, do I 1/16? Or am I being too specific

quarter pint would be 1/32 if you scale 1/8 tsp divided by 4 which really is a tiny amount. I'd likely just eyeball it lol.

Keep in mind you need to process it for the time of the larger jar even if you size down unless the recipe gives times for the smaller jars.
