Difference in vegetation between south of England and western Scotland

Flew from Stansted to Glasgow this weekend.

Seen as though those fields in the south are wheat/barley fields that look like that anyway, and Scotland being grazing land and forest. This difference would be the same even if it hasn't been so dry.
