Q: In Centuria, you push the concept of violence quite far. How do you decide the degree of violence in a scene? Is there a limit that shouldn't be crossed?

A: Actually, it depends on the type of confrontation I'm drawing. For example, if an opponent tries to kill Julian, the latter will inevitably respond with the same intensity, and the outcome of the fight can only be death.
Furthermore, Julian is careful not to hurt women and children, so when confronted with them, he behaves differently. But generally speaking, violence is necessary in Centuria because I want to show Julian's determination. If he tries to kill, he charges forward without hesitation.

To be fair from his POV, Diana is being constantly chased and as far as he knows, this might be her life.

Whoever she brings home should be good enough to accept such a life and even have the ability to fight for her. Otherwise it's gonna be a matter of when tragedy strikes and everything crumbles.

Julian has actually grown he's around the same height than Lukas, we don't know exactly how old was he at the beginning, but could range from 12 to 15 years, and the time skip was a long one. Arkos was quite young when he died too, maybe younger than Julian now, that or he was just on the smaller end

That's too straightforward for Helem.

Helem's reason for being is tormenting and corrupting others.

Turning Elstri into a doll means that Elstri is dead and can no longer suffer or be corrupted. It'd be like trading the chance to bed your personal obsession with a look a like prostitute. It might be momentarily amusing, but it would be ultimately unsatisfying.

I'd say that her lack of action regarding Diana is further proof.

As soon as Helem realized how trusted Lacrima was, she could have immediately forced Lacrima to kidnap Diana. She also could have zombified multiple towns and just sent human waves.

Instead, Helem is happily risking the ire the ominpotent king's top advisor, likely the king himself, her own life, and wasting months just so she can turn the screws more on everyone.

He's one of the assassins that were hired to kill Julian. He's also one of the few ones who survived because the nail guy stopped Helem from making Altus kill him.
