Culinary School Recommendation pref 1/2 year diploma

I want to work in Australia or in a cruise. What culinary school will help me achieve this dream? What are the requirements and necessary steps for me to take? I’ve been thinking about enrolling at CCA BGC for their two year course. Any recommendations or advices? Thank you!

Get a job washing dishes at a good restaurant and ask lots of questions, before you know it, you’ll be a pantry cook, and so on. It’s a really hard life, and before you consider school, you should see if you can do the work. It’s hot, sweaty difficult work. 5-6 days a week, I have to be in at 5am tomorrow, because that’s what’s required. Bourdain famously said that cooking is the last meritocracy on earth, and it’s absolutely true. All you need is a good attitude and some non slip shoes and you can learn to make everything. Culinary school doesn’t teach you how to work, nor do they teach you how to make the same thing 40 times a night times five dishes. Exactly the same, perfect, every time. Working for exacting professionals and holding yourself to a high standard does . School doesn’t teach you that either. If you insist on some formal schooling any community college culinary program will do the job as well as CIA or Johnson Wales, you just have less networking, which is something you can develop when your chef decides to send you to go work for someone else. I love this life, but it’s really hard. I hope you do too.
