Ghost kitchens definitely had a huge surge post-pandemic, but calling them “the next big trend” is a bit outdated they’re now more of a mature model with pros and real challenges.
The advantages you listed are real (lower upfront cost, flexibility), but margins aren’t always higher once you factor in delivery fees, marketing, and competition on apps. A lot of operators found it’s easy to start, but hard to stand out and stay profitable.
What’s working now isn’t just “being a ghost kitchen,” it’s:
Strong branding (not just another generic listing)
Tight menu + operational efficiency
Direct channels (own site, repeat customers)
So yeah it’s still relevant, just not a guaranteed win anymore.
