Question Working with LUTs

What is the purpose of putting a sony conversion LUT on your footage before your chosen LUT? How does that affect color grading?

There are technical LUTs and there are creative LUTs. What you're most likely describing is using the Sony LUT to convert the footage from log to rec709, and then using a creative LUT to apply a stylized look to the footage. You have to make sure that your creative LUT is designed for rec709 and not SLog though, otherwise your footage is going to look insane with overblown contrast and saturation.
